I'll admit, I'm a good cook, but desserts are something else. I have tried baking cookies, making pancakes, marzipan, cake, and it's a hassle! Pies however, seem to be a bit more my style. I have succesfully made tarts, to be more specific.
I really wanted to make a berry tart after seeing a recipe from Vikalinka.com. I think it was a US recipe, so I had to make some changes. I ended up making the recipe a bit more simple!
Ingredients:
Dough:
- 225 grams of flour
- 4 egg yolks
- 40 grams of sugar
- 125 grams of butter
- 15 ml of water
Filling:
- 600 grams of mixed berries
- 1 tbs. of lemon zest
- 4 eggwhites
- 250 grams of mascarpone
- 40 grams of sugar
- icing sugar
Recipe:
1. Mix the flour with the sugar and softened butter (I love a hand mixer for this). Add the egg yolks and water and mix it to one smooth dough. Press and roll into a ball.
2. Preheat the oven to 180 C°.
3. Spread flour on table and dough roller. Roll out the dough in a circle. Make sure you have 2 inches extra compared to the tray size (the smaller the pie the better, always, in my opinion, especially if you have a shitty small oven like me).
4. A trick to get the dough in the pie shape is to roll it onto the dough roller entirely, gently, and roll it back of over the tray. It's ok if it breaks, just press it together. Use a fork to make holes in the bottom of the pie. You do not need pie weight. Bake in the oven for 12 minutes. Gently remove from tray and let cool.
5. Mix the eggwhites fast for a few minutes so they become stiff. In this recipe the stiffness is not as important as in meringue or tiramisu but still. Mix the mascarpone, eggwhites, lemon zest and sugar in a bowl using a spoon or a mixer on slow position. Poor into pie shape.
6. Decorate the pie with berries like blackberries, blueberries, strawberries, raspberries and red currants. Dust with icing sugar.
